Bleu de Graven is a delicious, semi-firm blue cheese from Holland, made in a similar style to a classic Dutch gouda—with the addition of a robust, pleasantly tangy blue vein. The base cheese has a buttery mouthfeel, a nutty-sweet flavour with a balanced, savoury character and mild salt content. Bleu de Graven has a medium blue presence, pleasantly sharp, somewhat “spicy”, without being too barny or funky tasting. The manufacturer suggests that this cheese, with its creamy-yet-firm consistency—sure to yield and tantalizing gooey, rich melt—is particularly well suited to use in hot dishes such as lasagnas or on top of pizza.
