Modelled after an Italian cheese which comes in a variety of styles, this Canadian interpretation is closest in aspect to the Mezzano (middle) age of the original but it has a different flavour. It has a firm, but slightly crumbly texture and a flavour that is sweet and fruity, but also funky and piquant.
Beverage Pairing: Reds like Barolo and Chianti (Sangiovese), or a rich Napa. Cider, pilsner, cranberry juice and sparkling red grape juice.
