Produced by Roth Cheese, who self advertise as producing “Swiss-inspired, Wisconsin-made”, this semi-firm blue cheese is made from whole, raw milk sourced from local Holstein and Jersey cattle. Pleasantly pungent, with an earthy but mellow character, slight mushroom notes and a creamy, buttery mouthfeel—it’s easy to see why Roth advertises this cheese as a “gateway blue”, with a flavour that turns blue-veined cheese “skeptics into connoisseurs”.
