Milk-type: Pasteurized Cow’s Milk
Produced at the only Fromagerie in Canada run by Benedictine Monks, Fromagerie de L’Abbaye Saint-Benoît-du-Lac: Frere Jacques is a relatively mild cheese with a pleasantly sweet, slightly acidic aroma, reminiscent of walnuts and fresh fruit. Not unlike Swiss Emmenthal, Frere Jacques has a semi-firm texture with fairly large holes and a nutty, savoury-sweet character. Serve with hearty brown bread or pumpernickel, or alongside Asian pear, apples, or red grapes.
