Milk-type: Pasteurized Cow’s Milk

Not actually one style of cheese, but five—Double Gloucester, Caerphilly, Cheshire, Red Leicester, and Cheddar: Saxonshires cheese combines the famous cheeses of five different English Counties. All five layers are attractively stacked, one on top of the other, pressed together, then coated with a striking layer of black wax, in the classic fashion of historical British cheesemaking. Commonly referred to by the name “Five Counties”, Saxonshire cheese is a popular inclusion on cheese trays and charcuterie boards—where its dramatic appearance is always sure to make an impression.

While each layer has its own distinct character: they exist within similar traditions of cheesemaking, and their flavours intermingle harmoniously. Some more buttery and rich, some more dry and tart, every layer is savoury, well-rounded, and pleasantly but not aggressively sharp.
