A perennial classic, originating in France but now manufactured and enjoyed worldwide: Brie cheese is a mild bloomy rind cheese with a soft, at times somewhat runny, pale-golden interior and miniscule holes. Like traditional French Brie, Canadian Bries are buttery and creamy, with a light, delicately mushroomy flavour and a fluffy white bloom. Every wedge of Canadian Brie is oozing with the subtle-yet-decadent flavours of buttermilk and fresh cream, slightly lactic, with a pleasant, not-too-pungent aroma.

Brie can be enjoyed at room temperature, or baked in one of our ceramic dishes—served on crusty baguette, with honey, jams or fruit compotes, spicy or sweet red pepper jelly, nuts and raisins. Brie combines well with many fresh fruits, but especially strawberries, dates, apple, and pear, or alongside peaches and cream.

Beverage Pairings: Champagne, Pinot Noir or Beaujolais, Sauvignon Blanc, California Chardonnay. Light, high carbonation beers.
