Milk-type: Pasteurized Cow’s milk

This delectable Northern English specialty, also known as ‘Abbot’s Gold’ cheese, comes to us from the historic Wensleydale Creamery in Hawes, North Yorkshire. This relatively young cheddar cheese has a smooth, creamy mouthfeel—more buttery than sharp—which forms the perfect backdrop to the bold, upfront flavour of aromatic, tantalizingly sweet, richly savoury caramelized onions. Each semi-circle shaped “half wheel” of cheese (a presentation traditional to Northern English cheesemakers, and still prevalent) has an even chestnut brown colouring, speckled with small pieces of darker brown caramelized onions.

With a superbly full umami flavour and mouth-watering fragrance, our cheddar with caramelized onions is delicious as a stand-alone snack, or on a cheeseboard—but is especially recommended for inclusion in a traditional ploughmans lunch, on top of a hamburger with your other favourite toppings, crumbled over a hot dog with sauerkraut, or melted on top of a grilled steak.
