On its own—Brick Cheese is a relatively mild, rindless, semi-firm white cheese not unlike a young Cheddar. It is not as crumbly as Cheddar, and has a slightly softer, somewhat pliable texture with a delicate flavour. Brick cheese melts well for grilled cheese sandwiches, is easy to slice for packed lunches or a quick and healthsome snack, and is popularly used as a stuffing for pierogi in place of dry cottage cheese—and the addition of onion and parsley adds a deliciously savoury flavour and aroma to all applications.
