This decadently creamy, easy-going blue cheese hails from the mountainous Auvergne region of France—famous for its carefully crafted, historied blue cheeses. St. Agur is a double cream cheese, enriched with fresh cream and with a high butterfat content—it is sweet, reminiscent of buttermilk, with notes of vanilla, a mild mushroom aroma. With a relatively mild “blue” character, St. Agur is one of the first line options for those not yet sold on blue cheeses but hoping to be converted. It is neither funky nor earthy, with little saltiness and only a slight piquancy.
St. Agur is best enjoyed with fresh fruits and warm nuts, spread on pumpernickel or other dense, sweet breads. Try it drizzled with honey, or wrapped in salty prosciutto ham with a slice of pear or melon.
Wine Pairings: Malbec, Merlot; or other fruity reds, whether more dry or sweet in character, pair nicely so long as they are not so strong as to overwhelm the cheese. Alternately, serve alongside Champagne or Prosecco, the creamy-sweetness, understated blue character, and lack of salty character make St. Agur—unusual amongst blues, a good candidate for pairing with sparkling wines.
