Milk-type: Unpasteurized cow’s milk

This firm, unpasteurized cow’s milk cheese is produced exclusively in the Savoie region of the French alps. Beaufort has a pale yellow flesh and a brown-to-grey natural rind. The texture is smooth and buttery, and the flavour is savoury and complex—ranging from nutty and sweet to pungent and earthy, depending on the age and the season. The distinct characteristic aroma of the cheese is strong, grassy and “barny.”

Beaufort is an AOC (appellation d’origine contrôlée) certified cheese.

Wine Pairing: Bordeaux Red, Beajolais or non-oaked chardonnay, Cabernet Sauvignon.
