Although often compared to Dutch Gouda, Blarney Castle cheese is in fact made using a recipe that treads 600 years of history in Ireland. Made in the eponymous town of Blarney, near Cork, this cheese is touted as a completely natural product—made from the milk of grass-fed cattle, and free of artifical flavours and other additives. Blarney Cheese is semi-firm, fairly dense, with a savoury character, rich mouthfeel, and a mellow, buttery finish. Lieing somehwere between a young Cheddar and a mild Dutch Gouda: Blarney is nutty-sweet, with an understated fruity tang, a slightly grainy texture and a very round, full-bodied flavour.
Blarney Cheese is an excellent choice for serving on your next cheese tray or charcuterie board, unique and finely-crafted—but still with an easy-going, accessible flavour. Serve alongside fresh fruits, especially pear, grapes, or apples, to emphasize the natural tang of this cheese.
