The namesake of the Bresse area of Eastern France, this mild blue cheese was developed in response to a growing popularity of Italian-style cheeses in France after World War II. Covered in a fluffy white bloom, and not dissimilar in appearance to Brie—Bleu de Bresse has a pleasant aroma of button mushrooms and fresh cream. The flavour is quite mild compared to other blue cheeses, not particularly salty and with only a mild pungency and vein presence. Bleu de Bresse makes for an excellent entry point to enjoying blue cheeses; the “blue” character is relatively understated and very much balanced by the rich, buttery, and slightly sweet flavour of the flesh.
Wine Pairings: Sparkling wines, Cabernet Sauvignon, Syrah, Zinfandel, Port and fruit juice.
Food: warmed up and spread on top of crisp French bread
