Cahills Farmhouse Cheese is a family-owned, artisanal cheesemaking operation in County Limerick, Ireland. Likely their most famous product in markets outside of Ireland: this visually distinctive Cheddar cheese is touted as the original Irish Plain Porter cheese. Each individually handcrafted, brown-wax-coated wheel is generously marbled with Irish porter. The stunningly marbled interior is semi-firm, supple—ochre-coloured with thick, nut brown veining. The full-bodied, savoury-sweet flavour of this cheese is malty, yeasty, and pleasantly bittersweet—with notes of buttered toast, chocolate and coffee undertones.
Delicious alongside grapes, honeydew or cantaloupe melon, cherries, and toffee, this sumptuous cheese can also be melted: popularly on top of burgers or to add a complex, bittersweet dimension to a baked macaroni and cheese.
